God is Faithful

"Being confident of this, that he who began a good work in you will carry it on to completion until the day of Christ Jesus." Philippians 1:6

God give us an assurance that He will never leave us. He would carry on the work which he had begun to completion. He would not leave it unfinished. It would not be commenced and then abandoned. We are safe and secure in His loving arms, whatever struggles we may face or if we are losing our hopes His hand is there to hold us tight and embrace us with His love. He is faithful to complete the good works that He has started on us.

Food Journey: Mexican Hot Dog Casserole

I found this recipe on the side of a can of Texas Pete® Chile Sauce. I prepared it for dinner for my mother, brother, and his girlfriend and we all enjoyed it. Since them and I enjoyed it, I decided to share it here with you.


1 – 15 to 16 oz. can of black, pinto or chili beans
1 package of hot dogs
1 – 8 oz. package shredded Monterey Jack, Pepper Jack or taco cheese
1 – 10 oz. can Texas Pete® Hot Sauce
Texas Pete® Hot Sauce to taste
Pour the beans into a 9 inch by 12 inch or 9 inch square baking dish sprayed or lightly greased. Cut each hot dog lengthwise and arrange in a single layer on top of the beans. Spread the Texas Pete® Chile Sauce evenly on top. Splash on Texas Pete® Hot Sauce to taste. Sprinkle with cheese.
Bake at 350 degrees for 15 minutes or until hot and the cheese is melted.

I doubled the recipe and used a 11 inch by 13 inch baking dish. It is a easy meal to prepare. I also use chili beans switch made it a little runny but draining the sauce off the beans will take care of that problem unless you like it a little runny. You can have the kids help with the layering part of the recipe. Of course the cutting of the hot dogs should be left to an adult.


I am often surprised of the places I found good recipes. I look in cookbooks, websites, on packages of food, and ones that my friends and family share with me. When I get a really good one, I will share it here if I can.

Easter Fun

My sister Mary and her three youngest kids joined Mom and we for a weekend of fun this Easter. Saturday, while Julie's dad watched the kids, Mary, mom and I went shopping for Easter dinner. I was amazed we did not spend as much as we normally do for holiday meals. When we got back to mom's house we had dinner before having the kids dye some Easter eggs. Juan, Julie's dad, enjoy coloring and dying the eggs. It was the first time he dyed eggs. He is from Mexico and they do not do the eggs for Easter there. Julie was having a good time doing the eggs. After the kids dyed the eggs they went to bed. Once the kids were asleep I stuffed about 90 colored plastic eggs with candy for the eggs hunt we planned for Sunday afternoon.



This morning mom and I went to church. We had an incredible worship service for Easter. Pastor Ryan talked a little about the mission trip he just returned from during his sermon. I am thinking about going to the evening service when he and the other members that went with him give their reports.

On the way back to mom's house we picked up my brother, Steven and his girlfriend, Velma. Mary had Easter dinner almost done when we got back to mom's house. Mom helped with the final preparations. The pork roast was perfect as while as all the side dishes that Mary prepared. We sat down and enjoyed the meal.

Mary took the kids somewhere with Juan so I could hide the eggs for the eggs hunt. After I got all the eggs hid Mary called and said she was taking the kids on home since they were falling asleep. While hiding the eggs where not for nothing. I had Steven and Velma hunt the eggs. They kept the candy to share with their friends at the group home.

I believe everyone enjoyed their Easter. Mom was happy to have them over. I also got the air conditioner set up for her. I hope it keeps mom's house cool now the warmer is getting warmer. I enjoyed today but I am glad the next major holiday with so much preparation and activity is several months away.

Spiritual Retreat: "Singing with Prayer and Thanksgiving"

Every year our church celebrated Maundy Thursday by having a spiritual retreat. For the past years we usually have an outdoor retreat were most of the time we held it at Himlayang Pilipino Memorial Park. We rent one place on the park called "Malakas at Maganda Shrine". This year the board member of our church together with our Pastor decided to do our spiritual retreat on our home church and we also done it in a different way. Our theme for this year is "Singing with Prayer and Thanksgiving". It is a whole day acitivty started at 8:00AM and we ended around 4:00PM. It is a great blessing for me that I was able to join the said activity and I am really blessed from the very start till the end. The flow of our program is more on singing of praise and worship songs followed by a prayer. We used the four steps on how we pray which is the ACTS that stands for Adoration, Confessiion, Thanksgiving and Supplication. There is a portion given for those who would like to share there testimonies and I heard a lot of wonderful things God has done in the lives of our members. My heart is overflowing with joy and happiness, I feel God's presence as I sing praises and worship songs to Him. I cannot control my emotions and tears keep falling in my eyes. I do feel God's unconditional and unfailing love to me and everyone of us. Eventhough there are times we turn our back to Him and forget Him, still He never leave us nor forsake us. We are the reason that God gave His only son, and that He suffered and died on the cross to save us from our sins because He loves us. God is faithful, He is good all the time and He is worthy to receive all our praises and honor. To God be the glory now and forever.

Food Journey: Holiday Treats

One of the things I enjoy about the holidays is the foods that we only eat around the holidays. As Easter comes near each year, I look forward to eating the Cadbury Creme Eggs. I enjoy the look and taste of the creamy center that looks just like the yoke of a real eggs. Cadbury also makes eggs with Carmel centers that I like too, but I enjoy the Creme Eggs more.

Growing up my grandparents would make a Easter basket full of candy for me. Of course, Cudbury Creme Eggs were is the basket. I was not a big candy eater so the candy would last awhile. My grandfather would usually end up eating the chocolate Easter bunny they put in the basket. Besides the Cadbury Creme Eggs, I enjoyed the jelly beans, chocolate eggs, peeps, and the colored eggs. It was a long on fun dying the hard boiled eggs for Easter. I have dyed eggs with my niece and nephews a couple times.

My mom wants to do a Easter eggs hurt this coming weekend for my niece and nephews. I am sure that I will enjoy hiding the eggs. We will hide the plastic eggs with candy and prizes in them.

My family has holiday feast for Easter, Thanksgivings Day and Christmas. As part of the feast we have a couple foods that we normally only have for the holiday. Some of these foods are deviled eggs, creamed onions, and green bean casserole.

Each year, I look forward to having Little Debbie Christmas Trees Cakes around Christmas time. Then there is candy like candy canes, which I enjoy as while.

Holiday Foods are eaten becomes of traditions, to help remember something and simply because we just enjoy them. What are some of your holiday treats?

Aunt Is Back Home, Car Been Sick

I have the good news that my aunt was released from the hospital on Tuesday and is back home. She has a Physical Therapist that comes to her house and help her with walking and getting active. My aunt is happy to be back home. She feels bad that she can not remember a lot of the week she was in the hospital. I guess that is a side affect of the your blood sugars going up and down. Besides, who really wants to remember being in the hospital.

On the way back home from visiting my aunt in the hospital last Saturday my car overheated. I got to my mom's house when my car died halfway up her driveway. Since I knew the one of the cylinders was misfiring I got some spark plugs and wires and had a coworker's boyfriend help me with a tune up on Monday. My car still would not start after the tune up so I called the garage my mom takes her car to on Tuesday. They tow my car to the shop and had it working by the end of the day. I picked it up on Wednesday morning, it runs so much better now.


While I have a 1996 Brink Park Avenue and I rarely have problems with it. The problem this time was one of the parts in the motor is made of plastic and a hole burned through it and allowed anti-freeze and water to get into the cylinder. The one part alone cost one $200. They had to put new spark plugs in which make getting the plugs and wires before a waste of money. The mechanic did give me a discount on the parts. I have towing on my auto insurance, I will get $50 back for the towing part of the bill.

Between the car repairs and owning more on my income taxes, my savings have dropped down. I have reworked my budget for the rest of April and for May too. If I stick to the budgets I should be able to get my savings back up to pay for emergencies and the Visa processing for Jo Anne. I did budget for getting some new clothes and a book in May so I am not going without a few extra things. I also got a $25 check this week from work for perfect attendance for the first quarter. That money went into my savings. I am so amazed at the ways God provides for my needs.

What Life may Bring

Thought for the day:

Sometimes we wish we were young, we wish we were somewhere, we wish we had something. But sometimes we wish too much that we miss to enjoy WHO WE ARE, WHERE WE ARE and WHAT WE HAVE. The secret of happiness is to embrace and appreciate everything that happens in our life.

Happiness is between too little and too much. Having just enough wealth to meet your needs, enough poverty to learn how to work hard, enough blessings to know God loves you and enough problems so you don't forget Him, enough happiness to keep you happy, and enough sorrow to keep you human. What you are is God's gift to you, but what you become is your gift to God.

We can be happy anytime once we understand that the only place we'll ever find genuine happiness is right inside us. Happiness begins at the point of acceptance. The point when we stop questioning why life can't be perfect and the point when we just accept the world the way it is.

Do you know why God gives you another morning to wake up? It's the way to forget the pains of yesterday and see the chance of the new day brings. To dance and laugh again, to make up for the wrong things you have done, to see your friends and to make others feel happy and loved. You see it's more than just another long day ahead. It's God's way of reminding you that He cares and loves everyone that He sends us blessing called morning.

"The steadfast love of the Lord never ceases; His mercies never come to an end; they are new every morning, great is your faithfulness." Lamentations 3:22-23

Update On My Aunt

I am pleased to tell you at my aunt is doing better. She is still in the hospital. She should be going home or a rehab center on Monday depending on how much she can walk. They are working on stabilizing her blood sugar. They believe the seizure was caused by her blood sugar going up and down. When I got to the hospital today she was walking in the hallway. It was good to see her up and walking especially after seeing her on Monday hooked up to all the machines.

I have been reading a little on blood sugar this week. I have been amazed by the things that are affected by blood sugar levels. One of the websites I checked out was My Blood Sugar Levels.com.

Please continue to pray for my aunt and her family. I hope the next update will be with the news she is going home. That will hopefully be on Monday.

Aunt In The Hospital

Monday morning my brother called me, my aunt had been flown to the hospital in Asheville, North Carolina. My uncle found her unresponsive when he woke up. I had my brother call me back once he knew more about what was happening while I got ready to go get mom at work and head to the hospital. He called me back when he got to the hospital and talked with the doctors. When I got off the phone, I called mom and told her I was coming to get her and that her sister was in the hospital. We do not know what is happen. I had mom to call my sister when I picked her up to tell her what was happening and to give my mom a little something to do while we traveled to the hospital.

When we got to the hospital, met my sister with her kids and my uncle, cousin and brother. After my brother and uncle told us what happened, my mom and I went in to see my aunt. My aunt looked really bad when we first saw her. The doctors where doing all kinds of test to see what cause her to be unresponsive but everything was coming back okay.

They transferred her to a ICU unit in the hospital system around the time I had to leave for work. I went to visit her on Tuesday and she was doing and looking a lot better. After talking with her a little bit I knew she would be okay. She was joking and moving around. I took my uncle and cousin out to lunch at TGI Fridays down the road from the hospitals. They enjoyed the lunch and it was a good break from the hospital. I enjoyed talking about different things since we do not get to see one another much. We got back to the hospital as my brother, sister, and mother got there. I said good bye to my aunt and headed off to work.

I am glad to tell my aunt continues to improve and is in a regular room now. The doctors still have no idea what cause her to be unresponsive but they believe it was caused by her blood sugar and blood pressure going up and down over the past week. Please pray for my aunt and family. I will update you more when I can.

Drinks With A Coworker

Last night I met one of my coworkers, Aaron for drinks. Since I started working at the warehouse, Aaron and I try to get together with a couple other people from and have dinner at a restaurant and enjoy time together away from work. We invited a couple others this time but schedules did not work out so Aaron and I when to Chili's just down the road from the Asheville Airport. We enjoyed some beer while we talked about different topics.

Aaron and I share some of the same interest. We both like to travel and try new foods. We called about my trip I took back in February and March of 2009 to the Philippines to visit my Love, Jo Anne. I would like to take a friend with me when I go back to the Philippines. I am should they would enjoy the trip. I do know it would an eye opening experience. Aaron and I have talked about the Philippines on a couple occasions. Maybe once I know Jo Anne's Visa been approved I will ask Aaron if he would like to join me on my trip to bring Jo Anne to the United States.

We also talked about our love of learning and trying new things. We discussed wine, cigars, and different foods. While I was waiting for Aaron to arrived I checked out the wine store next to Chili's and I found out that they have wine tasting on Saturdays afternoons form two and until four. I am thinking about going to one of the tasting to try to find a wine I like. I bought a book last weekend called 500 Cheeses by Roberta Muir which makes wine recommendations. Aaron and I may go sometime and try cigars at a cigar store.

I hope that I have a job that pays better then te jobs I had in the past that I can enjoy enjoy new things with my friends more often. I enjoy going places with my friends and learning about different things.

A Cheerful Giver

I want to share the Thought for the Day that we had in our church this morning and it is also the lesson that we talked about in our Sunday school.

“Each man should give what he has decided in his heart to give, nor reluctantly or under compulsion, for God loves a cheerful giver. 2 Corinthians 9:7”


There is a story of one man who asks his master about the heaven and the hell. The master brings him into two rooms. Each room had a round table with a bowl of soup at the top. One room consists of a group of men who are malnourished, each of them had a spoon with a long handle longer than their arms, they keep trying to feed themselves but they failed. On the other room there are group of men who are well nourished, they are also using a spoon with a long handle longer than their arms but these group are able to feed each other not thinking on how to feed themselves but how to feed the others. The first room signifies the hell with a group of men who are greedy, they always think of themselves. The second room signifies the heaven with a group of men that has a cheerful heart to serve others.

God loves a cheerful giver. We must give whole heartedly not just to lift up ourselves. God looks what is inside our heart and not on the amount or the things we do to other people. Let us give with a joyful heart. When you give, do not expect anything in return. It is our character and attitude that matters most when we give.
